Vegetables are a great source of vitamins, minerals and fiber, but many of us don't get enough in our diet. Children are notorious for not liking even the thought of vegetables, let alone the idea of eating them! Some parents try to disguise vegetables in foods—by adding blended spinach or shredded carrots to meatballs, just so their children will get some essential nutrients.
